Fermented green tomatoes

All of us like to open a jar with preserved vegetables or fruits in winter. This recipe is very easy and tasty. Green tomatoes serve as a wonderful vodka chaser. It is also good when snow is falling outdoors and you want to stay at home and enjoy boiled potato with herring and fermented green tomatoes.


  • 1 kg (35 oz) tomatoes (of medium size)
  • 500-600 ml water
  • 1 tbsp salt
  • dill – to taste
  • parsley – to taste
  • horseradish – to taste
  • smallage – to taste
  • cherry tree leaves – to taste


Wash tomatoes and cut horseradish, dill, parsley smallage and cherry tree leaves. Combine all ingredients and mix them. Place tomatoes in the jars and add prepared spicery to each layer of tomatoes.

Pour tomatoes with pickle-juice and leave them to fret for 14-15 days under room temperature. Here we are! Fermented green tomatoes are ready.

You can keep tomatoes in a cool place. Cooked salty tomatoes should have a sour-salty taste and tough tomato skins.
