Potato flapjacks with salo


These p otato flapjacks with salo filling are really amazing. You should try this Ukrainian dish!


  • 6-8 potatoes
  • 1-2 tbsp flour
  • 1-2 tbsp sour cream
  • 1 bulb onion
  • 100 g (3,5 oz) salo (salted pork fat)
  • 2 chicken eggs
  • salt / pepper / spices – to taste
  • butter (fat) – for frying


Peel potatoes and grate them. Peel a bulb onion and chop it. Slice salo. Combine the prepared ingredients and mince them. As an alternative you can use a blender. Beat eggs and whip them slightly. Combine the eggs, sour cream, salt, pepper and spices. Stir everything thoroughly and add flour. Mix the ingredients.

Heat the frying pan and cook the potato flapjacks there. You can put the potato mass by the help of a spoon in order to form a correct shape. Fry the potato pancakes on both sides until they get crisp.

Place the prepared potato fritters on a platter and serve them with sour cream.

Tip! You can bake potato slapjacks as well. You will need to grease the baking sheet with butter or fat and place the pancakes there. Cook them in the beforehand preheated oven (to 250-280°C).

You may also add some special taste to the dish if you use dill, parsley or coriander. Simply include them in the filling and therefore you will give the dish more “summer” taste and unusual flavor.
