Potato soup with green beans and tomatoes

This potato soup with green beans and tomatoes is nourishing and tasty though it doesn’t contain any meat products. If you want to cook something special for a dinner then this recipe will be of service to you. The tomatoes are not only giving the soup a bright color but also an amazing flavor.

Ingredients:

  • 2 tbps olive oil
  • 2 bulb onions
  • 2 cloves of garlic
  • 3 medium carrots
  • 2 celery roots
  • 300 g (2 cups) pickled tomatoes
  • 1 l (liter) potato broth
  • 100 g (1/2 cup) green beans
  • 400 g (2 cups) canned cannellini beans
  • 55 g (1/2 cup) macaroni
  • 1/2 bunch of parsley
  • salt – to taste
  • black ground pepper – to taste

Cooking

Peel bulb onions and cloves of garlic. Chop them finely and then fry till golden. Rinse and peel carrots and celery roots. Dice the vegetables. Place the ingredients in a pan. Add peeled and cut in half tomatoes, the prepared onion and garlic. Pour 1/2 liter of potato broth above, mix everything and stew over low heat for 15-20 minutes to blend all of the flavors.

Wash and cut green beans into medium pieces. Add them to the pan and pour the remaining broth. Stir the soup and bring it to boil. Adjust salt and pepper to taste.

Then add cannellini beans and macaroni. Mix the ingredients and cook the dish for 5-8 minutes.

Ladle the soup into serving bowls and top it with chopped parsley.
