Cream jelly with strawberries and currants


  • 4 glasses of cream
  • 25 g of gelatin
  • 70 g of fortified wine
  • 0.5 g of vanillin
  • 1.5 glass of sugar
  • 60 g of (wild) strawberries
  • 60 g of currants


Soak gelatin in cold water, then dissolve it in 3 tbsp of warm water. Add wine, sugar and vanillin. Stir the mass and bring it to boil. Filter and cool the mass.

Chill cream, whip it and add the cooked syrup gradually. Stir everything properly.

Pour some of the mass in a dessert bowl. Arrange some strawberries and currants above. Then pour the cream mass and add berries.
