The recipe for this potato, bell pepper, carrot, and celery soup once again proves that healthy food can be not only useful but also tasty.
- middle celery root
- 2 different color bell peppers
- 2 middle potatoes
- 1 middle bulb onion
- 5 cloves of garlic
- 1 middle carrot
- 3 tbsp olive oil
- 1 fresh rosemary twig / 2 tbsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp coarse salt
Peel celery root, potato, onion, bell pepper, carrot and garlic. Dice all the ingredients except garlic. Place them in a deep bowl. Combine olive oil, chopped rosemary twig or dried rosemary, dried thyme and coarse salt. Mix everything carefully. Pour the vegetables with the prepared marinade. Stir them thoroughly. Cover a baking sheet with foil and put the prepared ingredients there. Bake the vegetables at 190°C (374°F) for about an hour. They should become soft. Then place the ingredients in a pan. Add squeezed garlic. Next pour warm water or vegetable broth till you get the necessary consistency. Season the soup with salt and pepper.
