Baked potato with homemade sausage

kovbasaToday we cook one of the favorite national dishes - baked potato with homemade sausage. You will definitely like this Ukrainian dish. The flavour of the pork sausage in combination with savory and crispy potato will not leave you indifferent.

Ingredients:

  • 1,5 kg (3,31 lb) meat
  • 100 g (0,22 lb) salo (lard)
  • 3 cloves of garlic
  • 30 g (0,07 lb) salt
  • 30 g (0,07 lb) ground black pepper
  • 1/4 tsp sugar
  • 1 tbsp starch
  • 1 tbsp water
  • 1 tbsp vegetable oil
  • 1,5 kg (3,31 lb) potato
  • herbs – to taste

Cooking

Chop meat and dice salo. Peel cloves of garlic and squeeze them. Toss all the ingredients together. Then add salt, sugar, starch and 15 g of black pepper. Mix everything properly.

Wash and peel casings. Stuff them with the prepared mixture and tie the casings. Then place the sausages on a plate and leave for 30-60 minutes. Make little holes in the casings by the help of a needle in order to let the air pass, also to prevent the breaking of the casings during a baking process.

Then place the sausages in a preheated oven and bake them at 200°C (392°F) for 30 minutes. Next peel and slice potatoes. Combine the potato with pepper and herbs and transfer it to the baking sheet and continue to cook for 20-30 minutes until sausages are golden brown and potato is crispy.

Serve the dish with pickled cabbage or cucumbers.
