Hetman’s meat and potato recipe



  • 1 kg beef
  • 1 tbsp wheat flour
  • 90 g melted butter
  • 600 g potatoes
  • 210 g carrots
  • 90 g parsley root
  • 3 bulb onions
  • 120 g tomato puree
  • 150 g pumpkin
  • 500 ml broth
  • salt – to taste
  • whole allspice – to taste
  • bay leaf – to taste
  • dried parsley, dill and lovage – to taste


Cut the meat into portions. Salt and pepper them. Preheat the frying pan and place the melted butter there. Fry the beef until crisp. Then add tomato puree and cook the ingredients for 5-7 minutes more. Pour everything with the broth. The pieces of meat should be covered completely. Stew them over moderate heat until done.

Peel the vegetables and slice them. Then fry the ingredients separately until lightly brown on top. Combine all the vegetables except potato with the prepared meat and stew them for 15 – 20 minutes. Next add potato, whole allspice, bay leaf, dried parsley, dill and lovage. Stew the mixture.

Heat the flour in a frying pan slightly. Then cool it and dissolve in some part of the broth which was formed after the beef stewing. Add it to the meat with vegetables. Heat everything for 5 minutes.

Top the dish with chopped parsley and serve.
