Liver stuffed cutlets (Kharkiv recipe)



  • 100 g of chicken
  • 10 g of white bread
  • 1 egg
  • 10 g of milk
  • 25 g of liver (pork / beef)
  • 5 g of bulb onion
  • 10 g of dairy butter
  • 15 g of dried breadcrumbs
  • 15 g of lard
  • salt – to taste


Combine chicken flesh and white bread soaked in the milk. Mince the mass twice. Add salt and mix thoroughly.

Peel and cut bulb onion. Fry onion and liver, mince them through the meat chopper. Add cut hard-boiled egg and dairy butter. Mix everything thoroughly.

Shape balls from the chicken mass and put liver minced meat in the centre of each ball. Shape cutlets again.

Whip eggs. Dip cutlets in eggs, coat them with breadcrumbs and fry.
