Beef and Champignon Stew in Red Wine

This rich dish contains tender and succulent beef, flavorful champignons and various useful vegetables such as celery, onion, garlic, prunes, and tomatoes. The recipe of the dish contains two special secrets, the first one is the use of soybean oil that helps to enhance the flavor of mushrooms and gives the whole dish a piquant zest. The second secret lies in the stewing process. All the ingredients are stewed in dry red wine which gives them a delicious smell and aftertaste.

Ingredients:

  • 3-4 prunes
  • 2 tomatoes
  • 4 bulb onions
  • 1 – 2 tbsp flour
  • 500 g (1,1 lb) beef
  • 2-3 cloves of garlic
  • 2-3 tbsp soybean oil
  • 100 g (3,5 oz) celery
  • 1 cup of dry red wine
  • 250 g (1/2 lb) champignons
  • black ground pepper – to taste
  • salt – to taste

Cooking

Cut beef into medium pieces. Salt and pepper the meat and then toss with flour. Preheat soybean oil in a frying pan and brown the beef pieces on both sides over high heat. Transfer the meat to a pan and set aside for a while.

Wash celery stalk and cut it into circles. Peel bulb onions and cloves of garlic. Chop the ingredients. Combine the celery, onion, and garlic. Place them in a frying pan and fry slightly. Add prunes, peeled and sliced champignons. Stir everything and cook until all liquid evaporates. Add the cooked ingredients to the pan with beef. Pour dry red wine above. Stew the dish components for about one hour until the beef is tender. In 15 minutes before the end of cooking and diced tomatoes.
