Mutton sichenyky


  • 600 g of mutton
  • 100 g of white bread
  • 0.5 of glass of broth/water
  • 4 tbsp of breadcrumbs
  • 2-3 tbsp of lard/ dairy butter
  • 2 eggs
  • 3 cloves of garlic
  • ground black pepper – to taste
  • salt – to taste
  • parsley – to taste
  • dill – to taste
  • sour cream


Cut mutton into small pieces, grind it through a meat chopper. Soak white bread in broth or water and add it to the mutton. Mix the ingredients and grate again. Peel cloves of garlic, squeeze them and mix with salt, pepper and raw yolks. Add to the meat and stir properly. Shape the meat mass in the form of rissoles, dip them in whites of the eggs and roll in breadcrumbs. Preheat lard or dairy butter on a skillet and fry sichenyky until they get a golden color.

Decorate the cooked rissoles with parsley and dill. Serve the dish with sour cream.
